I tried a new recipe tonight and I thought it was really good so here it is for all you to try!!
Pasta with sugar snap peas, feta & mint
(I got this from the June 2010 issue of Parents magazine)8 oz Penne pasta
8 oz sugar snap peas
2 Tbsp olive oil
1 Tbsp unsalted butter
2 cloves garlic, minced
zest of 1 lemon
1 Tbsp lemon juice
1/2 tsp salt
1/4 tsp black pepper
2 oz crumbled feta cheese
2 Tbsp chopped fresh mint
Red pepper flakes (optional)
Bring large pot of water to a boil. Add pasta and cook according to directions. Add the peas 3 minutes before the pasta is ready. Drain.
In same pan, heat the oil and butter over medium heat. Add the garlic and lemon zest and saute 1 minute (if the garlic begins to color, take pan off the heat). Stir in lemon juice, salt, and pepper. Quickly add back the drained pasta and peas, tossing well to combine.
Add the feta, red pepper flakes (if desired) and more black pepper to taste and stir gently to combine. Enjoy!
A couple things I thought might make this dish better...more veggies!! Next time I will add zucchini and yellow squash probably maybe a bell pepper too and
definitely chicken!! I also left out the mint because I don't use it much and didn't want to waste the money! I thought it was fine without it! I did not use the red pepper flakes either. I also forgot to add the peas to the pasta to cook but thought it was great with them raw.
